Ingredients
  

Soup Base
  • 4 cups pumpkin purée
  • 1 yellow onion chopped
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 6 leaves fresh sage
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp nutmeg optional

Method
 

  1. Heat olive oil in a large pot over medium heat and sauté onion until soft.
  2. Add garlic and sage, cooking briefly until fragrant.
  3. Stir in pumpkin purée and vegetable broth.
  4. Simmer for 20 minutes, allowing flavors to develop.
  5. Blend soup until smooth using an immersion blender.
  6. Return to low heat and stir in cream.
  7. Season with salt, pepper, and nutmeg.
  8. Serve warm with desired garnish.

Notes

For best flavor, use fresh sage and avoid boiling after adding cream.
