Ingredients
  

  • 6 chicken thighs boneless skinless
  • 0.5 cup soy sauce
  • 0.5 cup pineapple juice
  • 0.33 cup brown sugar
  • 2 tbsp ketchup
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 3 cloves garlic minced
  • 1 tbsp ginger grated
  • 6 pineapple rings
  • 3 cups white rice cooked

Method
 

  1. Whisk marinade ingredients and marinate chicken 30 minutes.
  2. Grill chicken 5-6 minutes per side until cooked.
  3. Grill pineapple rings until caramelized.
  4. Layer rice, pineapple, and chicken to assemble stacks.

Notes

Marinate longer for deeper flavor. Brush extra glaze while grilling.
