Muffin Batter
  • 2 cups rolled oats
  • 3 ripe bananas mashed
  • 2 eggs large
  • 0.25 cup honey or maple syrup
  • 0.25 cup plain yogurt
  • 2 tbsp olive oil
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp cinnamon
  • 0.25 tsp salt

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mash bananas in a large bowl until smooth.
  3. Whisk in eggs, yogurt, honey, oil, and vanilla.
  4. Stir in oats and let rest for 5 minutes.
  5. Mix in baking powder, baking soda, cinnamon, and salt.
  6. Divide batter evenly into muffin cups.
  7. Bake for 18–22 minutes until set.
  8. Cool on a wire rack before serving.
