- Cook pasta in salted water according to package instructions.
- Blend beetroot, olive oil, garlic, lemon zest, and lemon juice until smooth.
- Warm beetroot sauce gently in a pan and season.
- Add cooked pasta to sauce and toss to coat.
- Add pasta water if needed to loosen sauce.
- Remove from heat and fold in feta cheese.
- Garnish with herbs and serve.
