Ingredients
  

Pasta & Sauce
  • 12 oz pasta
  • 2 cups cooked beetroot
  • 3 tbsp olive oil
  • 2 garlic cloves minced
  • 1 tsp lemon zest
  • 2 tbsp lemon juice fresh
  • 0.75 cup feta cheese crumbled
  • salt to taste
  • black pepper to taste

Equipment

  • Large pot
  • Blender or food processor
  • Skillet or saucepan

Method
 

  1. Cook pasta in salted water according to package instructions.
  2. Blend beetroot, olive oil, garlic, lemon zest, and lemon juice until smooth.
  3. Warm beetroot sauce gently in a pan and season.
  4. Add cooked pasta to sauce and toss to coat.
  5. Add pasta water if needed to loosen sauce.
  6. Remove from heat and fold in feta cheese.
  7. Garnish with herbs and serve.

Notes

For extra flavor, roast beetroot before blending.
