Ingredients
  

Whoopie Cakes
  • 2 cups all-purpose flour
  • 2 tbsp cocoa powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 tbsp red food coloring
Filling
  • 0.5 cup unsalted butter softened
  • 8 oz cream cheese softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Equipment

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets.
  2. Whisk dry ingredients together.
  3. Cream butter and sugar, then add egg and vanilla.
  4. Mix in food coloring, then alternate dry ingredients and buttermilk.
  5. Pipe heart shapes onto baking sheets.
  6. Bake 10–12 minutes and cool completely.
  7. Beat filling ingredients until smooth.
  8. Sandwich cakes with filling and serve.

Notes

Do not overbake to maintain soft texture. Chill briefly for cleaner edges.
