Ingredients
  

Base
  • 2 tbsp olive oil
  • 1 lb chicken breast cubed
  • 1 onion chopped
  • 2 cloves garlic minced
  • 0.5 cup celery sliced
  • 0.5 cup carrots diced
  • 0.5 cup bell peppers chopped
Liquids
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 cup cooked rice
Seasoning
  • 1 tbsp cajun seasoning
  • 0.5 tsp paprika
  • 0.5 tsp thyme
  • 0.25 tsp cayenne pepper optional

Equipment

  • Large pot
  • Wooden spoon
  • Knife
  • Cutting board

Method
 

  1. Heat oil and cook chicken until browned, then set aside.
  2. Sauté vegetables until softened.
  3. Add tomatoes and cook briefly.
  4. Pour in broth and bring to simmer.
  5. Add spices and return chicken.
  6. Simmer 15–20 minutes.
  7. Add rice and cook 5 more minutes.
  8. Adjust seasoning and serve hot.

Notes

Add cream for richness or spice for heat. Great for meal prep and freezing.
