- Heat oil and cook chicken until browned, then set aside.
- Sauté vegetables until softened.
- Add tomatoes and cook briefly.
- Pour in broth and bring to simmer.
- Add spices and return chicken.
- Simmer 15–20 minutes.

- Adjust seasoning and serve hot.
Notes
Add cream for richness or spice for heat. Great for meal prep and freezing.
