Ingredients
  

Mushroom Filling
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 lb mushrooms sliced
  • 3 cloves garlic minced
  • 1 shallot finely diced
  • 1 tsp fresh thyme
  • 1 tbsp parsley chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup cream cheese softened
  • 1 cup Gruyère cheese shredded
Pastry
  • 1 sheet puff pastry thawed
  • 1 egg beaten
  • 1 tbsp Parmesan cheese grated
  • fresh thyme leaves for garnish

Equipment

  • Large skillet

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Heat butter and olive oil in a skillet over medium heat.
  3. Cook mushrooms until browned and moisture evaporates.
  4. Add garlic, shallot, thyme, parsley, salt, and pepper and cook briefly.
  5. Cool mushroom mixture slightly, then stir in cream cheese and Gruyère cheese.
  6. Roll puff pastry slightly and place on prepared baking sheet.
  7. Spoon filling down center of pastry.
  8. Cut diagonal strips on both sides and braid over filling.
  9. Brush with egg wash and sprinkle with Parmesan cheese and thyme.
  10. Bake for 25-30 minutes until golden brown and flaky.
  11. Cool slightly before slicing and serving.

Notes

For extra richness, drizzle with a touch of truffle oil before serving.
