Ingredients
  

  • 2 heads garlic peeled cloves
  • 4 cups broth chicken or vegetable
  • 2 tbsp olive oil
  • 2 eggs
  • 1 tsp thyme
  • salt and pepper to taste
  • 4 slices crusty bread toasted
  • 2 tbsp Parmesan cheese optional

Method
 

  1. Heat olive oil and sauté garlic until fragrant.
  2. Add broth, thyme, salt, and pepper.
  3. Simmer for 20 minutes.
  4. Drizzle in beaten eggs while stirring.
  5. Place toasted bread in bowls.
  6. Ladle soup over bread.
  7. Top with Parmesan and serve.

Notes

Do not overcook garlic to avoid bitterness. Serve immediately for best texture.
