Ingredients
  

Chicken Base
  • 1.5 kg bone-in chicken pieces
  • 2 tbsp olive oil
  • 1 large onion finely chopped
  • 4 cloves garlic minced
  • 2 tomatoes chopped
  • 2 tbsp tomato paste
Rice
  • 3 cups basmati rice rinsed and soaked
  • 4 cups chicken broth

Equipment

  • Large heavy pot
  • Wooden spoon
  • Baking sheet
  • Strainer

Method
 

  1. Sauté onion and garlic in olive oil until fragrant.
  2. Add tomatoes, tomato paste, spices, and cook until thickened.
  3. Brown chicken pieces in the mixture.
  4. Add water, simmer until chicken is cooked through.
  5. Remove chicken and measure broth.
  6. Cook rice in reserved broth until tender.
  7. Optional: broil chicken for crispy skin.
  8. Assemble rice and chicken, garnish, and serve.

Notes

For authentic flavor, use whole spices and high-quality basmati rice.
