- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter and sugar together until light and fluffy.
- Add eggs and vanilla extract, mixing until smooth.
- Whisk flour, baking powder, and salt in a separate bowl.
- Combine dry ingredients with wet mixture, alternating with milk until dough forms.
- Roll dough into small balls and place on baking sheet.
- Bake 12-15 minutes until lightly golden.
- Cool completely and hollow out the bottom of each cookie half.
- Fill with pastry cream or jam and sandwich two halves together.
- Brush cookies with peach juice or liqueur and tint with food coloring.
- Roll cookies in sugar and garnish with mint leaves.
Notes
Traditional recipes often use Alchermes liqueur for coloring and flavor, but peach juice works well for a family-friendly version.
