Ingredients
  

Cookie Dough
  • 3 cups all-purpose flour
  • 0.5 cup unsalted butter softened
  • 0.75 cup sugar
  • 2 eggs
  • 0.25 cup milk
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 0.25 tsp salt
Filling
  • 1 cup pastry cream or vanilla custard
  • 2 tbsp peach jam
Decoration
  • 0.5 cup sugar for coating
  • 0.25 cup peach juice or peach liqueur
  • peach and red food coloring
  • mint leaves optional garnish

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugar together until light and fluffy.
  3. Add eggs and vanilla extract, mixing until smooth.
  4. Whisk flour, baking powder, and salt in a separate bowl.
  5. Combine dry ingredients with wet mixture, alternating with milk until dough forms.
  6. Roll dough into small balls and place on baking sheet.
  7. Bake 12-15 minutes until lightly golden.
  8. Cool completely and hollow out the bottom of each cookie half.
  9. Fill with pastry cream or jam and sandwich two halves together.
  10. Brush cookies with peach juice or liqueur and tint with food coloring.
  11. Roll cookies in sugar and garnish with mint leaves.

Notes

Traditional recipes often use Alchermes liqueur for coloring and flavor, but peach juice works well for a family-friendly version.
