Cookie Dough
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 3 eggs large
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter melted
  • 0.25 cup milk
  • 1 tsp vanilla extract
  • 0.5 tsp almond extract
Filling
  • 1 cup ricotta cheese
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp peach jam

Method
 

  1. Preheat oven and prepare baking sheets.
  2. Mix dry ingredients together.
  3. Beat eggs and sugar until fluffy.
  4. Add butter, milk, and extracts.
  5. Combine with dry ingredients to form dough.
  6. Shape into balls and bake.
  7. Cool and hollow out centers.
  8. Prepare filling and assemble cookies.

Notes

Decorate with food coloring and sugar for a realistic peach look.
