- Slice onions into thick rings and separate into large and smaller rings.
- Mix cream cheese, diced jalapeños, cheddar cheese, garlic powder, salt, and pepper.
- Place smaller onion rings inside larger ones to create space between them.
- Fill the gap between rings with the cheese mixture.
- Freeze stuffed rings for 30 minutes to firm up.
- Prepare breading bowls with flour, beaten eggs, and breadcrumbs mixed with paprika and salt.
- Coat rings in flour, dip in egg, then coat with breadcrumbs.
- Repeat egg and breadcrumb coating for extra crispiness.
- Heat oil to 350°F (175°C).
- Fry rings for 3-4 minutes until golden brown.
- Drain on paper towels and serve hot with dipping sauce.
Notes
For extra flavor, mix bacon bits or pepper jack cheese into the filling.
