Onion Rings
  • 2 large onions cut into rings
  • 2 jalapeños finely diced
  • 4 oz cream cheese softened
  • 0.5 cup cheddar cheese shredded
  • 0.25 tsp garlic powder
  • 0.25 tsp salt
  • 0.25 tsp black pepper
Coating
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup breadcrumbs
  • 0.5 tsp paprika
  • 0.5 tsp salt
Frying
  • vegetable oil for frying

Method
 

  1. Slice onions into thick rings and separate into large and smaller rings.
  2. Mix cream cheese, diced jalapeños, cheddar cheese, garlic powder, salt, and pepper.
  3. Place smaller onion rings inside larger ones to create space between them.
  4. Fill the gap between rings with the cheese mixture.
  5. Freeze stuffed rings for 30 minutes to firm up.
  6. Prepare breading bowls with flour, beaten eggs, and breadcrumbs mixed with paprika and salt.
  7. Coat rings in flour, dip in egg, then coat with breadcrumbs.
  8. Repeat egg and breadcrumb coating for extra crispiness.
  9. Heat oil to 350°F (175°C).
  10. Fry rings for 3-4 minutes until golden brown.
  11. Drain on paper towels and serve hot with dipping sauce.

Notes

For extra flavor, mix bacon bits or pepper jack cheese into the filling.
