- Soak bamboo skewers in water for at least 30 minutes.
- Thread chicken and green onion pieces alternately onto skewers.
- Combine soy sauce, mirin, sake, brown sugar, garlic, and ginger in a saucepan.
- Simmer sauce for 8-10 minutes until slightly thickened.
- Preheat grill or grill pan to medium-high heat.
- Grill skewers for 3-4 minutes per side.
- Brush skewers generously with yakitori sauce while cooking.
- Continue grilling until chicken is cooked through and lightly charred.
- Brush with additional sauce before serving.
- Serve hot garnished with sesame seeds and green onions if desired.
Notes
For extra smoky flavor, cook over charcoal. Serve with steamed rice and grilled vegetables for a complete meal.
