Chicken
  • 4 large boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
Cheese Filling
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 1 egg
  • 2 tsp Italian seasoning
  • 3 cloves garlic minced
Sauce and Topping
  • 2 cups marinara sauce
  • 0.5 cup extra mozzarella cheese for topping
  • 0.25 cup fresh basil for garnish

Method
 

  1. Preheat oven to 375°F and prepare a baking dish with marinara sauce.
  2. Slice pockets into chicken breasts carefully without cutting through.
  3. Mix ricotta, mozzarella, Parmesan, egg, garlic, Italian seasoning, salt, and pepper in a bowl.
  4. Stuff chicken breasts generously with cheese filling.
  5. Season chicken with olive oil, paprika, salt, and pepper.
  6. Place stuffed chicken into baking dish and spoon marinara sauce over top.
  7. Top with extra mozzarella cheese.
  8. Bake until chicken is fully cooked and cheese is bubbly and golden.
  9. Garnish with fresh basil before serving.

Notes

For even more lasagna flavor, add chopped spinach to the ricotta filling or serve over pasta or zucchini noodles.
