Ingredients
  

Chicken
  • 4 boneless skinless chicken breasts sliced into cutlets
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 0.5 tsp paprika
Coating
  • 1 cup breadcrumbs
  • 0.75 cup Romano cheese grated
  • 0.5 cup all-purpose flour
  • 2 eggs beaten
  • 2 tbsp milk
Lemon Sauce
  • 3 tbsp butter
  • 3 cloves garlic minced
  • 0.25 cup chicken broth
  • 0.25 cup fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley chopped
Cooking
  • 3 tbsp olive oil

Method
 

  1. Slice chicken breasts into thinner cutlets and season with spices.
  2. Prepare dredging stations with flour, egg mixture, and breadcrumb Romano mixture.
  3. Coat chicken in flour, egg mixture, and breadcrumb mixture.
  4. Heat olive oil in a skillet and cook chicken until crispy and golden brown.
  5. Remove chicken and prepare lemon garlic sauce in the same skillet.
  6. Simmer butter, garlic, broth, lemon juice, and zest together.
  7. Return chicken to skillet and spoon sauce over the top.
  8. Garnish with parsley and serve warm.

Notes

Serve immediately for maximum crispiness. Fresh lemon juice gives the best flavor and brightness.
