Method
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream butter and sugar until light and fluffy.
- Mix in egg yolk, vanilla, and lemon zest.
- Add flour and salt, mixing until a soft dough forms.
- Roll dough into balls and place on baking sheets.
- Press thumbprint into center of each cookie.
- Fill centers with lemon curd.
- Bake 12–15 minutes until lightly golden.
Notes
Do not overbake for the softest texture. Chill dough if too soft.
