Ingredients
  

Potatoes
  • 4 russet potatoes cubed
  • 2 tbsp olive oil
  • 1 tsp paprika
BBQ Beef
  • 1 lb ground beef
  • 1 cup BBQ sauce
  • 1 small onion diced
  • 3 cloves garlic minced
Toppings
  • 2 cups cheddar cheese shredded
  • 0.5 cup sour cream
  • 0.25 cup green onions sliced

Method
 

  1. Season diced potatoes and roast until crispy.
  2. Cook ground beef in a skillet until browned.
  3. Add onion and garlic and sauté until softened.
  4. Mix BBQ sauce and seasonings into the beef.
  5. Divide roasted potatoes into bowls.
  6. Top potatoes with BBQ beef mixture.
  7. Add cheese and toppings before serving.

Notes

For extra crispy potatoes, avoid overcrowding the baking sheet and roast at high heat.
