Ingredients
  

Potato Skillet
  • 2 pounds russet potatoes diced
  • 8 slices bacon chopped
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp onion powder
  • 1.5 cups shredded cheddar cheese
  • 0.25 cup sour cream
  • 0.25 cup green onions chopped
  • 2 tbsp parsley chopped

  • Cast iron skillet
  • Cutting board
  • Knife
  • Slotted spoon

Method
 

  1. Soak diced potatoes in cold water for 15 minutes then drain and dry thoroughly.
  2. Cook bacon in a cast iron skillet until crispy.
  3. Remove bacon and leave some grease in the skillet.
  4. Add butter and diced potatoes to the skillet.
  5. Season potatoes with paprika salt pepper and onion powder.
  6. Cook potatoes until crispy and golden brown.
  7. Add garlic and cook briefly until fragrant.
  8. Top potatoes with cheddar cheese and cover until melted.
  9. Sprinkle bacon green onions parsley and sour cream over the skillet.
  10. Serve hot directly from the skillet.

Notes

For extra crispiness avoid overcrowding the skillet. Add steak bites or fried eggs for a complete meal.
