Method
- Mix olive oil, lemon juice, zest, garlic, dill, salt and pepper.
- Marinate chicken for at least 15 minutes.
- Cook chicken in skillet 6–7 minutes per side until done.
- Cook cauliflower rice in skillet for 3–4 minutes.
- Mix yogurt sauce ingredients in a small bowl.
- Assemble bowl with rice, chicken, vegetables and sauce.

Great for meal prep and stores well up to 4 days.
