Low Carb High Protein Lemon Dill Chicken Bowl

Ingredients
  

Lemon Dill Chicken
  • 2 chicken breasts boneless
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 2 cloves garlic minced
  • 1 tbsp fresh dill chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Bowl Ingredients
  • 2 cups cauliflower rice
  • 1 cup cucumber sliced
  • 1 avocado sliced
  • 0.5 cup cherry tomatoes halved
Dill Yogurt Sauce
  • 0.5 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp fresh dill chopped
  • salt to taste

Equipment

  • Mixing bowls
  • Skillet or grill pan
  • Knife

Method
 

  1. Mix olive oil, lemon juice, zest, garlic, dill, salt and pepper.
  2. Marinate chicken for at least 15 minutes.
  3. Cook chicken in skillet 6–7 minutes per side until done.
  4. Cook cauliflower rice in skillet for 3–4 minutes.
  5. Mix yogurt sauce ingredients in a small bowl.
  6. Assemble bowl with rice, chicken, vegetables and sauce.

Great for meal prep and stores well up to 4 days.
