Ingredients
  

Pudding
  • 3 tbsp chia seeds
  • 1 cup coconut milk
  • 1 tbsp honey
  • 0.5 tsp vanilla extract
Topping
  • 1 cup mango pureed or diced

Method
 

  1. Mix chia seeds, coconut milk, honey, and vanilla.
  2. Let sit and stir again after 5 minutes.
  3. Refrigerate for 2–4 hours or overnight.
  4. Prepare mango topping.
  5. Layer pudding and mango.
  6. Serve chilled.

Notes

Use ripe mango for best flavor and sweetness.
