Ingredients
  

Overnight Oats Base
  • 1 cup rolled oats
  • 1 cup coconut milk
  • 0.5 cup Greek yogurt or dairy-free yogurt
  • 1 tbsp chia seeds
  • 1 tbsp honey or maple syrup
  • 0.5 tsp vanilla extract
  • 1 cup fresh mango diced
  • 2 tbsp shredded coconut

Equipment

Method
 

  1. Combine oats, coconut milk, yogurt, chia seeds, honey, vanilla, and salt.
  2. Fold in half of the diced mango.
  3. Refrigerate at least 4 hours or overnight.
  4. Stir and top with remaining mango and shredded coconut before serving.

Notes

Adjust sweetness based on mango ripeness. Add extra coconut milk if thicker texture is desired.
