Method
- Cook chopped bacon in a large skillet until crispy.
- Transfer bacon to a paper towel-lined plate.
- Leave some bacon grease in the skillet and add butter and onions.
- Cook onions slowly until deeply caramelized.
- Add garlic and sauté briefly.
- Pour in bourbon and simmer until slightly reduced.
- Add maple syrup, brown sugar, balsamic vinegar, Worcestershire sauce, pepper, salt, and red pepper flakes.
- Return bacon to the skillet and simmer until thick and jam-like.
- Cool slightly before serving or storing.
Notes
Serve warm or room temperature with burgers, crostini, cheese boards, or sandwiches. Store refrigerated in airtight jars.
