Ingredients
  

Bacon Onion Jam
  • 1 pound thick-cut bacon chopped
  • 3 large yellow onions thinly sliced
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 0.33 cup bourbon
  • 0.25 cup maple syrup
  • 2 tbsp brown sugar
  • 2 tbsp balsamic vinegar
  • 1 tsp Worcestershire sauce
  • 0.5 tsp black pepper
  • 0.25 tsp salt
  • 0.25 tsp red pepper flakes

Method
 

  1. Cook chopped bacon in a large skillet until crispy.
  2. Transfer bacon to a paper towel-lined plate.
  3. Leave some bacon grease in the skillet and add butter and onions.
  4. Cook onions slowly until deeply caramelized.
  5. Add garlic and sauté briefly.
  6. Pour in bourbon and simmer until slightly reduced.
  7. Add maple syrup, brown sugar, balsamic vinegar, Worcestershire sauce, pepper, salt, and red pepper flakes.
  8. Return bacon to the skillet and simmer until thick and jam-like.
  9. Cool slightly before serving or storing.

Notes

Serve warm or room temperature with burgers, crostini, cheese boards, or sandwiches. Store refrigerated in airtight jars.
