Ingredients
  

Base Mixture
  • 2 cups crushed vanilla wafer cookies
  • 1 cup sweetened shredded coconut
  • 0.5 cup powdered sugar
  • 4 oz cream cheese softened
  • 2 tbsp fresh lime juice
  • 1 tbsp lime zest
  • 1-2 tbsp tequila optional
  • 1 tbsp orange juice or orange liqueur optional
  • 0.5 tsp vanilla extract
Coating
  • 0.5 cup shredded coconut or powdered sugar for rolling

Method
 

  1. In a large bowl, combine crushed cookies, shredded coconut, and powdered sugar.
  2. Beat cream cheese until smooth and creamy.
  3. Add lime juice, lime zest, tequila if using, orange juice or liqueur, and vanilla extract. Mix well.
  4. Fold dry mixture into cream cheese mixture until a thick dough forms.
  5. Chill mixture for 20-30 minutes to firm.
  6. Roll into tablespoon-sized balls.
  7. Coat each ball in shredded coconut or powdered sugar.
  8. Refrigerate at least 1 hour before serving.

Notes

For extra flair, mix a pinch of sea salt into the coating for a margarita-inspired finish. Store refrigerated up to 5 days.
