Ingredients
  

Soup Base
  • 1.5 lbs chicken cut into pieces
  • 8 cups water or chicken broth
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 onion chopped
  • 3 garlic cloves minced
  • 3 scallions chopped
  • 2 sprigs thyme
Vegetables
  • 1 cup pumpkin cubed
  • 1 cup yellow yam cubed
  • 2 potatoes chopped
  • 2 carrots sliced
Dumplings
  • 1 cup all-purpose flour
  • 0.5 tsp salt
  • 0.5 cup water

Method
 

  1. Place chicken in a large pot with water, onion, garlic, scallions, thyme, salt, and pepper.
  2. Bring to a boil and simmer for 20 minutes.
  3. Add pumpkin, yam, potatoes, and carrots.
  4. Add whole Scotch bonnet pepper and continue simmering.
  5. Mix flour, salt, and water to form dumpling dough.
  6. Roll into small balls and drop into soup.
  7. Simmer another 20–25 minutes until vegetables and dumplings are cooked.
  8. Remove pepper, adjust seasoning, and serve hot.

Notes

Leaving the Scotch bonnet pepper whole adds flavor without overwhelming heat.
