Method
- Place chicken in a large pot with water, onion, garlic, scallions, thyme, salt, and pepper.
- Bring to a boil and simmer for 20 minutes.
- Add pumpkin, yam, potatoes, and carrots.
- Add whole Scotch bonnet pepper and continue simmering.
- Mix flour, salt, and water to form dumpling dough.
- Roll into small balls and drop into soup.
- Simmer another 20–25 minutes until vegetables and dumplings are cooked.
- Remove pepper, adjust seasoning, and serve hot.
Notes
Leaving the Scotch bonnet pepper whole adds flavor without overwhelming heat.
