Ingredients
  

Halibut
  • 4 halibut fillets 6 oz each
  • 2 tbsp olive oil
  • salt and black pepper to taste
Lemon Garlic Butter Sauce
  • 3 tbsp unsalted butter
  • 3 cloves garlic minced
  • 2 tbsp lemon juice fresh
  • 1 tsp lemon zest
  • 1 tbsp parsley chopped

Equipment

  • Heavy skillet
  • Fish spatula

Method
 

  1. Pat halibut dry and season both sides.
  2. Heat oil and sear fish 3-4 minutes per side.
  3. Remove fish and prepare butter sauce in same pan.
  4. Add garlic, lemon juice, and zest.
  5. Return fish briefly and spoon sauce over before serving.

Notes

Cook until internal temperature reaches 130-135°F for best texture. Avoid overcooking.
