Fritter Batter
  • 1 cup pumpkin purée
  • 2 eggs large
  • 0.75 cup all-purpose flour
  • 0.75 cup Parmesan cheese grated

Method
 

  1. Mix pumpkin purée, eggs, garlic, herbs, and spices.
  2. Stir in flour, baking powder, and Parmesan cheese.
  3. Heat oil in skillet over medium heat.
  4. Fry spoonfuls of batter until golden on both sides.
  5. Drain on paper towels and serve warm.

Notes

Remove excess moisture from pumpkin for crispier fritters.
