Peach Cobbler Filling
  • 2 cups fresh peaches peeled and diced
  • 0.5 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • 1 tbsp cornstarch
  • 0.5 cup water
Cheesecake Filling
  • 8 oz cream cheese softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream
Crust & Assembly
  • 0.5 cup graham cracker crumbs
  • 2 tbsp butter melted
  • 6-8 waffle cones

Method
 

  1. Cook peaches, sugar, lemon juice, cinnamon, and water in a saucepan until softened.
  2. Add cornstarch and cook until thickened, then cool.
  3. Beat cream cheese until smooth, then mix in powdered sugar and vanilla.
  4. Fold in whipped cream to create a fluffy cheesecake filling.
  5. Mix graham cracker crumbs with melted butter.
  6. Layer cheesecake filling and peach cobbler mixture into cones.
  7. Top with graham crumble and optional garnishes.
  8. Serve immediately or chill briefly before serving.
