Method
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix peanut butter, powdered sugar, and vanilla together and roll into small balls. Freeze for 20 minutes.
- Melt chocolate chips and butter together until smooth.
- Whisk sugars and eggs until thick and glossy, then mix in melted chocolate and vanilla.
- In another bowl combine flour, cocoa powder, baking powder, and salt.
- Fold dry ingredients into the chocolate mixture to form a thick dough.
- Chill dough for 15 minutes.
- Flatten a scoop of dough, place frozen peanut butter ball in center, and wrap dough around it.
- Place cookies on baking sheet spaced apart.
- Bake for 10–12 minutes until crackly on top. Cool before serving.
Notes
For extra indulgence drizzle melted chocolate or sprinkle sea salt on top. Cookies can be stored at room temperature for up to 4 days.
