Ingredients
  

Salsa
  • 2 cups pineapple diced
  • 1-2 chipotle peppers in adobo minced
  • 2 tbsp adobo sauce
  • 0.5 red onion chopped
  • 1 red bell pepper diced
  • 1 jalapeño optional, chopped
  • 0.25 cup cilantro chopped
  • 1 lime juiced
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp honey optional

Method
 

  1. Combine pineapple, red onion, and bell pepper in a bowl.
  2. Add chipotle peppers and adobo sauce, mixing well.
  3. Stir in jalapeño and cilantro.
  4. Add lime juice and season with salt and pepper.
  5. Mix thoroughly and adjust sweetness with honey if desired.
  6. Chill for at least 20 minutes before serving.

Notes

Adjust spice level by adding more or less chipotle peppers. Best served fresh.
