Base
  • 8 oz cream cheese softened
  • 0.25 cup unsalted butter softened
  • 2 cups powdered sugar
  • 20 oz crushed pineapple well drained
  • 2.5 cups shredded coconut

Method
 

  1. Beat cream cheese and butter until smooth.
  2. Mix in powdered sugar and vanilla.
  3. Fold in pineapple and coconut.
  4. Chill mixture until firm.
  5. Roll into balls and coat as desired.

Keep refrigerated until serving. Can be frozen up to 1 month.
