Ingredients
  

Lava Cake Batter
  • 4 oz dark chocolate high quality
  • 0.5 cup unsalted butter
  • 0.25 cup pistachio paste
  • 0.5 cup powdered sugar
  • 2 eggs large
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 0.25 cup all-purpose flour
  • 0.25 tsp salt

Method
 

  1. Preheat oven to 425°F (220°C) and grease ramekins.
  2. Melt chocolate and butter until smooth.
  3. Stir in pistachio paste.
  4. Whisk eggs, yolks, and sugar until pale.
  5. Fold chocolate mixture into egg mixture.
  6. Add flour and salt gently.
  7. Divide into ramekins and bake 10-12 minutes.
  8. Invert onto plates and serve immediately.

Notes

For extra indulgence, serve with vanilla ice cream or raspberry sauce. Do not overbake to maintain molten center.
