Method
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together flour, baking soda, baking powder, and salt in a bowl.
- In another bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.
- Add egg and vanilla extract and mix until combined.
- Mix in pistachio cream until smooth.
- Gradually add dry ingredients and mix until a soft dough forms.
- Fold in chocolate chips and chopped pistachios.
- Scoop dough onto baking sheet leaving space between cookies.
- Bake for 10–12 minutes until edges are lightly golden.
- Cool on a wire rack before serving.
Notes
For extra flavor, sprinkle sea salt on top of warm cookies or drizzle melted chocolate after baking.
