Ingredients
  

Brie Bites
  • 8 mini brie rounds 1–2 oz each
  • 1 cup pistachios shelled, finely chopped
  • 1 egg beaten, for egg wash
  • 1 tbsp honey plus extra for drizzling
  • 2 sheets puff pastry optional, thawed and cut into squares
  • fresh thyme or rosemary for garnish

Equipment

  • Baking sheet
  • Parchment paper
  • Small bowl
  • Brush for egg wash

Method
 

  1. Preheat oven to 375°F (190°C). Line baking sheet with parchment paper.
  2. Chop pistachios and place in a shallow bowl. Mix with pinch of salt if desired.
  3. Brush brie rounds with beaten egg. Press tops into chopped pistachios.
  4. Optional: Place brie on puff pastry squares, fold edges, brush with egg wash, sprinkle pistachios on top.
  5. Bake 10–12 minutes until brie is soft and pistachios lightly toasted.
  6. Drizzle with honey and garnish with thyme or rosemary. Serve warm.

Notes

Keep brie chilled while preparing for easier coating. Serve with fruit for extra flavor contrast.
