Ingredients
  

Cream Layer
  • 1 cup heavy whipping cream
  • 8 oz mascarpone cheese
  • 0.5 cup pistachio cream
  • 0.33 cup powdered sugar
  • 1 tsp vanilla extract
Assembly
  • 1 cup espresso cooled
  • 24 ladyfinger cookies
  • 0.5 cup crushed pistachios
  • cocoa powder for dusting

Method
 

  1. Whip heavy cream until soft peaks form.
  2. Mix mascarpone, pistachio cream, sugar, and vanilla until smooth.
  3. Fold whipped cream into mascarpone mixture.
  4. Dip ladyfingers briefly into cooled espresso.
  5. Layer dipped ladyfingers in serving dish.
  6. Spread pistachio cream mixture over ladyfingers.
  7. Repeat layers and top with pistachios and cocoa powder.
  8. Chill at least 4 hours before serving.

Notes

For best flavor, chill overnight before serving. Garnish with extra pistachios for added crunch.
