Ingredients
  

Cookie Dough
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1 cup unsalted butter softened
  • 1.25 cups granulated sugar
  • 0.5 cup brown sugar
  • 2 eggs large
  • 2 tsp vanilla extract
  • 8 mini strawberry Pop Tarts chopped
  • 0.5 cup strawberry jam
  • 1 cup white chocolate chips
Frosting
  • 1.5 cups powdered sugar
  • 3 tbsp milk
  • 0.5 tsp vanilla extract
  • 1 drop pink food coloring optional
  • 2 tbsp rainbow sprinkles

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, baking powder, and salt in a medium bowl.
  3. Cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs and vanilla extract, mixing until smooth.
  5. Gradually mix dry ingredients into wet ingredients until combined.
  6. Fold in chopped Pop Tarts and white chocolate chips.
  7. Scoop large dough balls onto baking sheet and create a small indentation in each.
  8. Add strawberry jam to the center and lightly cover with dough.
  9. Bake for 12-15 minutes until edges are lightly golden.
  10. Cool completely before frosting with powdered sugar glaze and decorating with sprinkles.

Notes

Try different Pop Tart flavors for fun variations. Store cookies in an airtight container for up to 4 days.
