Ingredients
  

Fries
  • 4 cups potatoes fresh-cut or frozen
  • 2 tbsp vegetable oil
  • Salt to taste
Gravy
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups beef stock
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
Toppings
  • 1-2 cups cheese curds fresh or frozen

  • Medium saucepan

Method
 

  1. Prepare fries by soaking fresh potatoes for 30 minutes, then pat dry. Toss with oil and salt.
  2. Bake at 425°F (220°C) for 25–30 minutes, flipping halfway, or deep fry until golden.
  3. In a saucepan, melt butter and whisk in flour to form a roux. Cook 1-2 minutes.
  4. Gradually whisk in beef stock and Worcestershire sauce. Simmer 5–7 minutes until thickened. Season with salt and pepper.
  5. Place fries on serving plate, sprinkle cheese curds over fries.
  6. Pour hot gravy over fries and cheese curds. Serve immediately.

Notes

For extra indulgence, top with cooked bacon or sautéed mushrooms.
