Method
- Prepare fries by soaking fresh potatoes for 30 minutes, then pat dry. Toss with oil and salt.
- Bake at 425°F (220°C) for 25–30 minutes, flipping halfway, or deep fry until golden.
- In a saucepan, melt butter and whisk in flour to form a roux. Cook 1-2 minutes.
- Gradually whisk in beef stock and Worcestershire sauce. Simmer 5–7 minutes until thickened. Season with salt and pepper.
- Place fries on serving plate, sprinkle cheese curds over fries.
- Pour hot gravy over fries and cheese curds. Serve immediately.
Notes
For extra indulgence, top with cooked bacon or sautéed mushrooms.
