Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out puff pastry on the baking sheet and score a 1-inch border around the edges.
- Brush the pastry border lightly with olive oil.
- Arrange prosciutto slices evenly across the pastry inside the border.
- Sprinkle mozzarella and parmesan cheese over the prosciutto.
- Crack eggs evenly across the tart so each slice gets part of an egg.
- Drizzle heavy cream lightly over the eggs and season with salt and pepper.
- Bake for 15-18 minutes until pastry is golden and egg whites are set.
- Remove from oven, sprinkle with chopped herbs, slice, and serve.
Notes
Add sautéed mushrooms, spinach, or cherry tomatoes for extra flavor and texture.
