Ingredients
  

Tart Base
  • 1 sheet puff pastry thawed
  • 6 slices prosciutto
  • 4 eggs large
  • 0.5 cup mozzarella cheese shredded
  • 0.25 cup parmesan cheese grated
  • 0.25 cup heavy cream
  • 1 tbsp olive oil
Seasoning
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp chives or parsley chopped

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out puff pastry on the baking sheet and score a 1-inch border around the edges.
  3. Brush the pastry border lightly with olive oil.
  4. Arrange prosciutto slices evenly across the pastry inside the border.
  5. Sprinkle mozzarella and parmesan cheese over the prosciutto.
  6. Crack eggs evenly across the tart so each slice gets part of an egg.
  7. Drizzle heavy cream lightly over the eggs and season with salt and pepper.
  8. Bake for 15-18 minutes until pastry is golden and egg whites are set.
  9. Remove from oven, sprinkle with chopped herbs, slice, and serve.

Notes

Add sautéed mushrooms, spinach, or cherry tomatoes for extra flavor and texture.
