Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 0.5 cup unsalted butter melted
  • 0.25 cup brown sugar
Filling
  • 16 oz cream cheese softened
  • 1 cup pumpkin puree
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp ginger
  • 0.25 tsp salt
Topping
  • 0.5 cup caramel sauce

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper.
  2. Mix graham cracker crumbs, melted butter, and brown sugar. Press into pan and bake 8-10 minutes.
  3. Beat cream cheese until smooth. Add sugars and mix well.
  4. Add pumpkin, eggs, vanilla, and spices. Mix until combined.
  5. Pour filling over crust and bake 35-40 minutes until center is set.
  6. Cool completely, then refrigerate at least 3 hours.
  7. Drizzle with caramel before slicing and serving.

Notes

Chill overnight for best slicing results. Add caramel after chilling.
