- Preheat oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper.
- Mix graham cracker crumbs, melted butter, and brown sugar. Press into pan and bake 8-10 minutes.
- Beat cream cheese until smooth. Add sugars and mix well.
- Add pumpkin, eggs, vanilla, and spices. Mix until combined.
- Pour filling over crust and bake 35-40 minutes until center is set.
- Cool completely, then refrigerate at least 3 hours.
- Drizzle with caramel before slicing and serving.
Notes
Chill overnight for best slicing results. Add caramel after chilling.
