Ingredients
  

Cake Batter
  • 2.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup brown sugar
  • 1 tbsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1.75 cups plant-based milk unsweetened
  • 0.5 cup neutral oil
  • 2 tsp vanilla extract
  • 0.75 cup pumpkin purée

Method
 

  1. Preheat oven to 350°F (175°C) and prepare baking pan.
  2. Whisk dry ingredients together in a large bowl.
  3. Add wet ingredients and mix until smooth.
  4. Divide batter and flavor one portion with pumpkin and spices.
  5. Layer batters into pan and gently swirl.
  6. Bake 45–55 minutes until fully set.
  7. Cool before slicing and serving.

Notes

Allow cake to cool completely for best slicing results.
