Ingredients
  

  • 2 cups grated carrots
  • 1 large apple julienned
  • 0.33 cup dried cranberries
  • 2 tbsp lemon juice fresh
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Grate the carrots and place them in a large mixing bowl.
  2. Slice the apple into thin strips and add to the bowl with carrots.
  3. Add dried cranberries to the bowl.
  4. Whisk lemon juice, olive oil, honey, salt, and pepper in a small bowl.
  5. Pour dressing over salad and toss gently to combine.
  6. Chill briefly before serving for best flavor.
