Ingredients
  

  • 1 medium eggplant diced
  • 2 medium zucchini sliced
  • 2 bell peppers chopped
  • 4 cups vegetable broth
  • 2 tbsp olive oil

Method
 

  1. Sauté onion and garlic in olive oil.
  2. Add vegetables and herbs.
  3. Simmer until tender.
