Ingredients
  

Stew Base
  • 2 lbs beef chuck cut into chunks
  • 2 tbsp flour
  • 2 tbsp olive oil
  • 1 onion diced
  • 3 carrots sliced
  • 3 potatoes diced
  • 4 cups beef broth
Cheddar Dumplings
  • 1 cup flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 2 tbsp butter cold
  • 0.5 cup cheddar cheese shredded
  • 0.33 cup milk

Method
 

  1. Toss beef with flour, salt, and pepper.
  2. Brown beef in olive oil in a Dutch oven.
  3. Add onions, garlic, and celery and cook until soft.
  4. Stir in broth, vegetables, herbs, and simmer for 60 minutes.
  5. Mix dumpling ingredients to form dough.
  6. Drop dumplings onto stew and cover.
  7. Cook for 15 minutes until dumplings are fluffy.

Notes

For deeper flavor, add stout beer like Guinness to the stew.
