Ingredients
  

  • 1.5 cups arborio rice
  • 4 cups chicken broth warm
  • 4 oz pancetta diced
  • 2 egg yolks
  • 0.75 cup parmesan cheese grated

Method
 

  1. Cook pancetta until crispy and set aside.
  2. Toast rice and gradually add broth while stirring.
  3. Cook until creamy and tender.
  4. Stir in egg yolks, cheese, butter, and pancetta off heat.

Notes

Remove from heat before adding eggs to avoid scrambling.
