Ingredients
  

Filling
  • 3 cups butternut squash cubed
  • 2 tbsp olive oil
  • 2 heads garlic roasted
  • 1 cup ricotta cheese
  • 0.5 cup parmesan cheese grated
  • 1 tsp sage chopped
Roll-Ups
  • 8 lasagna noodles
  • 1 cup mozzarella cheese shredded
Sauce
  • 1 cup heavy cream
  • 0.5 cup vegetable stock
  • 2 tbsp butter

Method
 

  1. Preheat oven to 400°F (200°C). Roast squash until tender.
  2. Roast garlic until soft and golden.
  3. Cook lasagna noodles until al dente.
  4. Blend squash and garlic until smooth.
  5. Mix purée with ricotta, parmesan, and seasoning.
  6. Spread filling on noodles and roll.
  7. Arrange rolls in baking dish.
  8. Pour sauce over rolls, top with mozzarella, and bake.
