Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 cups roasted red peppers drained
  • 4 cups vegetable broth
  • 0.75 cup heavy cream
  • 12 oz cheese ravioli
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Equipment

  • Large pot
  • Immersion blender
  • Wooden spoon

Method
 

  1. Heat olive oil in a large pot and sauté onion until soft.
  2. Add garlic and cook briefly until fragrant.
  3. Stir in roasted red peppers and broth; simmer gently.
  4. Blend soup until smooth.
  5. Return to pot and stir in cream.
  6. Add ravioli and cook until tender.
  7. Season with salt and pepper and serve hot.

Notes

Add ravioli just before serving to maintain texture.
