Gratin Ingredients
  • 1 medium butternut squash peeled and sliced thin
  • 2 tbsp unsalted butter for greasing dish
  • 1 cup heavy cream
  • 1 cup grated Gruyère cheese
  • 2 tbsp fresh sage leaves chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup Parmesan cheese for topping

Method
 

  1. Preheat oven to 375°F (190°C) and butter a 9x13-inch baking dish.
  2. Arrange a layer of butternut squash slices at the bottom of the dish.
  3. Sprinkle with salt, pepper, chopped sage, and a portion of Gruyère cheese.
  4. Repeat layers until all squash and cheese are used, finishing with Gruyère on top.
  5. Pour heavy cream evenly over the layered squash and cheese.
  6. Sprinkle Parmesan on top and cover loosely with foil.
  7. Bake for 30 minutes, remove foil, and bake an additional 10 minutes until top is golden and bubbly.
  8. Let cool 5 minutes before serving.

Notes

For a nutty flavor, toast sage leaves in butter before adding. Can be prepared a day ahead and baked before serving.
