Ingredients
  

Rice Krispie Base
  • 6 cups Rice Krispies cereal
  • 4 tbsp unsalted butter
  • 10 oz mini marshmallows
  • 0.5 tsp vanilla extract
Caramel Coconut Topping
  • 2 cups sweetened shredded coconut
  • 11 oz soft caramel candies unwrapped
  • 2 tbsp heavy cream
Chocolate Drizzle
  • 1 cup semi-sweet chocolate chips

Equipment

  • Saucepan
  • 9x13 baking pan
  • Spatula
  • Microwave-safe bowl

Method
 

  1. Melt butter and marshmallows. Stir in vanilla and cereal.
  2. Press mixture into lined pan and set aside.
  3. Toast coconut until golden.
  4. Melt caramels with cream and mix with coconut.
  5. Spread caramel coconut over base.
  6. Melt chocolate and drizzle on top. Cool and slice.

Notes

Chill briefly before cutting for cleaner slices. Store in airtight container.
