Ingredients
  

Main
  • 250 g spaghetti
  • 2 cans sardines in olive oil
  • 3 cloves garlic minced
  • 0.25 cup olive oil
  • 0.5 tsp chili flakes optional
  • 1 lemon zest and juice
  • 2 tbsp parsley chopped
  • salt to taste
  • black pepper to taste
  • 0.25 cup Parmesan cheese optional

Equipment

  • Large pot
  • Pan
  • Colander
  • Wooden spoon

Method
 

  1. Cook pasta in salted boiling water until al dente.
  2. Reserve pasta water and drain pasta.
  3. Heat olive oil and sauté garlic until fragrant.
  4. Add chili flakes and sardines, breaking them apart.
  5. Mix in lemon zest and juice.
  6. Add pasta and toss to combine.
  7. Add pasta water if needed for sauce.
  8. Season and finish with parsley.
  9. Serve with Parmesan if desired.

Notes

Use high-quality sardines for best flavor. Add vegetables like spinach or tomatoes for variation.
