Filling
  • 4 eggs scrambled
  • 0.5 cup cheese shredded
  • 0.5 cup ham diced
  • 1 tbsp butter
  • salt and pepper to taste
  • fresh herbs optional

Method
 

  1. Whisk all crepe batter ingredients until smooth.
  2. Rest batter for 10 minutes.
  3. Cook thin crepes in a non-stick pan.

  6. Fold or roll crepes.
  7. Heat briefly to melt cheese.
