Ingredients
  

Breakfast Filling
  • 12 lasagna noodles
  • 8 eggs large
  • 0.5 cup milk
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 lb breakfast sausage
  • 6 slices bacon cooked and chopped
  • 1 small onion diced
  • 1 cup cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
Creamy Cheese Sauce
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1.5 cups milk
  • 0.5 cup Parmesan cheese grated
  • 0.5 tsp garlic powder

Method
 

  1. Cook lasagna noodles according to package instructions and drain.
  2. Preheat oven to 375°F (190°C).
  3. Cook sausage in a skillet until browned and set aside.
  4. Sauté diced onion until soft.
  5. Whisk eggs, milk, salt, and pepper then scramble lightly.
  6. Prepare cheese sauce by melting butter and whisking in flour.
  7. Slowly add milk while whisking until sauce thickens.
  8. Stir in Parmesan cheese and garlic powder.
  9. Layer noodles, eggs, sausage, bacon, onions, and cheese in a baking dish.
  10. Repeat layers and finish with sauce and mozzarella.
  11. Bake for 25–30 minutes until bubbly and golden.

Notes

This dish can be assembled the night before and baked fresh in the morning for easy brunch preparation.
